I love to snack throughout the day. Thinking about the sugary high that they gave was the best part of the day. I would think about the snack I wanted tomorrow more than dinner to the night. So when I started my food diary I saw what my problem was, my snacking habits.
The down fail of some diets is snacks, being able to graze throughout the day is easier than cooking a meal and sitting down at the table to eat. I am a prime example, being a chef there is food all around me constantly, saying that I do not pick up a fry or chips here and there would be a total lie. We all have our weaknesses. What helped me is writing it down, every single bite I took is in my diary. I sometimes cringe about how much I ate but I am constantly learning how to snack less or just how to make my snacks the highlight of my day.
Asking my friends what their favorite junk food/snacks are so I could revamp one. As the saying goes…Let’s Make it Healthy! Snack Edition!
Peanut Butter Popcorn
1/4 cup popcorn kernels
Vegetable oil
1/2 cup honey
1/3 cup sugar
1/2 cup peanut butter (Find Sugar-Free or Whipped)
1/2 teaspoon vanilla
Sea Salt (Fine)
This makes about eight cups. Do not buy popcorn in the box! Instead buy a bag of Kernels. It last longer and it is cheaper. Along with those benefits you can add the flavors you want, so go crazy.
Heat a 4-quart heavy pan over medium heat and film the bottom with vegetable oil. When the oil is hot but not smoking, add the popcorn, shake to distribute, then put a lid on the pan, leaving a small crack for steam to escape. When the first kernel pops, put the lid on all the way. As the popcorn starts popping, shake vigorously to make sure the kernels are distributed evenly. When the popping slows to a few seconds between pops, take the pan off the heat. Unless you like burnt popcorn. Sometimes I do, but not today.
Let your popcorn cool! Also, take out any up popped kernels! Add a little sea salt to taste.
Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for about 2 minutes, then remove from the heat and add the peanut butter. Stir vigorously until all the peanut butter is melted, then mix in the vanilla. Smells so good right now.
Immediately pour the peanut butter caramel over the popcorn and stir with a long-handled wooden spoon until it’s all coated. Even if you do not want to wait please let it cool for about ten minutes before you dig in. If you want add some almonds for an added crunch.
